The method

  • Yield 1 cup (about 300 ml)

Ingredients

  • Lotus Plumulae (Lian Zi Xin), dried 2–3 g (about 1 tsp)
  • licorice root, thin dried slices 2–3 slices (about 3 g)
  • water 300 ml (about 1.25 cups)
  • optional rock sugar or honey to taste (balances bitterness)
  1. Prep

    Rinse the lotus plumules and licorice slices under cold water.

  2. Simmer licorice

    Place the licorice in a small pot with the water. Bring to a boil, then simmer on low for 5 minutes.

  3. Infuse lotus

    Turn off the heat, add Lotus Plumulae, cover, and steep 5–7 minutes.

  4. Sweeten

    Add rock sugar while simmering so it dissolves. If using honey, wait until the tea is below about 60°C before stirring it in.
