Coix and winter melon pork rib soup

Coix seed (薏苡仁) and winter melon drain damp. White hyacinth bean and chen pi support the Spleen. Pork ribs keep the pot savoury. A classic Singapore-climate soup when digestion feels heavy and damp.

Ingredients

  • coix seeds 10 g
    薏苡仁, Yi Yi Ren
  • white hyacinth bean 10 g
    白扁豆, Bai Bian Dou
  • dried mandarin peel 5 g
    陈皮
  • winter melon 500 g
    冬瓜
  • pork ribs 500 g
  • ginger a few slices
  • water enough to cover
  • salt to taste
  1. Prep

    Rinse coix, hyacinth bean, and peel. Cut winter melon into chunks. Slice ginger. Blanch pork ribs and rinse.

  2. Boil then simmer

    Put all ingredients into a pot with enough water to cover. Bring to a hard boil, then reduce to a low simmer for about 1.5 hours.

  3. Season

    Taste and add salt. Serve warm.
